White Chocolate Muffins
The amounts given get you about 10/12 muffins.
125 g butter at room temperature
125 gr of white sugar
2 eggs, lightly beaten
1 teaspoon vanilla extract
125g self-raising flour
75 grams of white chocolate chips
First of all, pre-heat the oven to 190 ° (if it has a cake position, better).
What are the next steps? They are very simple:
Beat the butter with the sugar until you have a smooth mixture. Add the lightly beaten eggs and the vanilla extract. I usually use the mixer to do this part of the recipe. It is much easier and faster than the whisk.
Sift the flour and add to the mix, this time using the whisk.
Pour the batter into the molds (2/3 of their capacity) and bake for 12-20 minutes.
